red eye gravy

NC piedmont variety;

fry thick slices of country ham in an iron skillet with pepper and veg. oil. Fry it til there are crispies in the bottom. A streak o' lean will make it extra special. Add slight tablespoon of reg four. Brown, then on high, add 2 cups or so of water. Will bubble and spit, sit up all the loose bits and poor off into a bowl. The ham meat will settle in the bottom and form an "eyeball" looking thing. Should be thin enough that you will have to stir it up a bit when you take a portion. My grandma's didn't have coffee. Could just be a quirk, but neither did the other Aunts'. She would bake off spoon biscuits and we would poke a hole in some and pour mollasses inside. (must be where I learned to hot potato all those pots I get out too hot!) The same treatment for the redeye gravy. (droolin...) Or stir a big ol spoonful into a mess o'grits with a hot cup of coffee. Wow. The fried fatback is another story altogether. Um, fried fatback and grits...and deep fried sausages. How
can one animal make so many tasty things? Must be magic...

And those "biscuits" that you get at fast food places are grotesque. Mine are with buttermilk and real butter cut into them to make them tender. Hand formed into little mounds. No lard co-agulated on the top. Open them and the smell alone will make you full...

Just can't have that stuff regular any more. But when I go visit my sister....big country breakfast is the highlight of the day...

was made from coffee..hence redeye.
ham drippins, grease...flour and coffee.
yum, yum. half a dozen eggs and a loaf of toast.
butter drippin. honey on the `mess oh bread` when
done with the eggs, ham, tatters.
hillbillies like `dannon` made it different...maybe she
will give us her recipes.
