Happy Thanksgiving everyone!

I will be smoking my turkey at 00022 (?). If that is somewhere under 250
degrees F, then that=B9s correct.

The outside looks like a mellow aged oak, sort of a sawdust firing
appearance, and the inside will appear like a light shino with iron oxide
under the glaze, sponged on and wiped off.

Sometimes the breast is a faded plum, possibly due to the cranberry juice i=
n
the water pan.

The wood chips are apple and hickory.

I wonder what would happen if I put the wood chips soaked in cranberry juic=
e
in a terra sig-ed porcelain bowl. I guess I shouldn=B9t have the turkey in
the smoker when I try that one.
