Just spotted another wicked term from the same book that is new to me
........ livering....

Livering -

An increase in the consistency of a paint resulting in a rubbery or
coagulated mass.

I think "livering" would be a reddish browning, probably caused from iron
deposits.

in "Sacratomato" - this was the first year since I've been here (13 years),
where the highways weren't red from spilled tomatoes.
