I have had the best luck with middle school kids with slab, or pinch bird
houses, wind chimes(almost any cut, stamped, thrown on rocks, or trees,
flowers etc.), and clay whistles. Also birdbaths go well, slab of clay
some newspaper around the edges, and all sorts of stuff inside, inlays,
stamps, applied stuff, sculpted birds, sticks, rocks, cars, flowers,
whatever.

Kids are kind of funny sometimes. When you first start out most of them
look bored, and antsy, but when they find out they can do anything they
want, and you won't tell them no, it is like an explosion. Busy smiling
faces, really cool.
