paying potters for pictures of their work

It's a market economy, folks. If you don't have your pictures
published without pay, someone else will. There's no shortage
of fine claywork being made at present, and the books will get
illustrated with or without you.

Some may take this as evidence that we all need to unite, to
make sure that no one will give up their images for free.
Somehow, I doubt this will happen. And personally, I find
the benefits of such publication are far more valuable than
a free book, or even $25.

The analogy with authors of the written word sounds like a
valid one. I just don't see any likelihood of it being
adapted for art-book illustrations.

Just to throw another questionably-valid analogy into the
mix: In newspapers, it's the photographer, not the subject,
that gets paid. Most art-documentation photographers assign
the copyright with the image, which you buy as part of the
cost of your photo shoot. If payment for published art
images becomes the norm, it would not be unreasonable for a
photographer to require additional compensation as well,
upon publication. I can't see splitting a free book Solomon-
like, but cash? That's different.
