firing speed for stoneware bisque & glaze

Dear All:

I would appreciate the benefit of your opinion on stoneware bisque and
glaze firings:

Do you fire slowly until 120 deg. C., then speed up, or wait until
around 300 deg. C. to speed up?

Why is it common to fire fast just before the last stage of firing?
