Subject: casserole/Yunnan cooker


I have the first casserole that I made in 1968. It was a casserole with =
=3D
a lid, but the center had a stem that is like an Angel food cake pan. I =3D
threw the center stem and
casserole bottom from a single piece of clay. It is technically a =3D
Yunnan steamer/casserole. It can be used either way, as a casserole or =3D
as a steamer.=3D20
The first dish I made with it was chicken with onions and ginger. I =3D
put a layer of chicken pieces, layered with lots of thin ginger slices =3D
and onions and put a
1/2-cup of good Sherry over the chicken that was seasoned with salt =3D
and pepper.

I put the casserole on a bowl with water in it.
=3D20
The casserole rests on the rim of a metal bowl. I also put some good in =
=3D
the water bowl and the oven heated to about 350-400 degrees. As the =3D
water mix evaporated
up the open stem, the condensed steam mixture dripped into the =3D
casserole off of the lid . I watch the liguid level so it doesn't get =3D
above the stem in the casserole.

When done there is a tremendous broth with the chicken, onions and =3D
ginger. Towards the end of the cooking time, the lid is removed to =3D
brown the upper=3D20
level of chicken. Serving rice with this make a great meal. =3D20

Ceramics has come a long way from functional ceramics that was the back =3D
bone of American Ceramics. It is a wondrous medium and makes many =3D
