Whatever ware cart brand(s) you choose, it's a good idea to stick with one
shelf size so that ware boards can be used everywhere.

We've built fixed shelving that accepts the same size shelves used in our
rolling cart, and cut a generous supply of spare shelves from sheets of
1/2" plywood to be used anywhere. (If you don't have facilities to cut
plywood, there's an excellent chance that the local home center or wood
yard would be willing to cut-up the plywood for you.)

By the way, we have a Brent cart, which seems to be very stable.
